I would just go for it but I'm afraid of the potential carvar/vehicles.meta and clipping issues 

It should be, but there's no need to replace a vehicle because adding new ones is very easy.

Well, then you can just add the car files as policeb in the latest patchday vehicle rpf, and then replace the vehicles.meta entry, and then add a new carvariations.meta entry with the correct sirensetting to some existing carcols.meta file.

Try this. Just change the <handlingId></handlingId> line in vehicles.meta for policeb in mods\update\update.rpf\common\data\levels\gta5 with fiveM. I haven't tried this but it should work fine. I think. Do this after adding the replacement policeb in ya patchday folder obviously.

or download a normal non police bike and replace it. That way you dont have to worry about a police bike, be funny as cops will be riding a normal bike.

I made a police 4 clon in the vehicle.meta from the policeb slot and took out the color change in dar carvariations.ymt. works wonderfully

When i did it the cars would spawn half-way underground since the bike spawns in sideways tilted a little bit.

I added a new sahp vehicle to policeb. Just make sure u use a vehicles meta. I just copied police over and change to policeb and changed handeling to the car I was using. Worked fine
