I found this ambulance on gta4-mods. It has a full interior, stretcher, EKG monitor and everything else.
Wouldn't that be a high poly count or what ever you call it. Its the first model I have seen with an interior. Most people want it but don't use it because it takes up much game space and other stuff, like the effects that modded cars have on GTA 4. 

Yeah, their is one other out there I have seen with a full interior.

There is also a Ford F350, by Sanchez I believe that has a full interior.

If you're looking for a smaller poly count one, with some kind of an interior, there is an "E-Van" (Speedo I think) by Corleone that has a VERY basic interior.

Ambulances in GTA IV are restricted because the rear passengers can only sit a certain way due to the seat nodes, which makes it hard to make a detailed interior where passengers can still enter and sit without looking really weird.
