Can someone describe the differences between the new els corona options 1-5 as far as flash patterns and speed? Also, will these work with els cars that already have headlights flashing?

the lower the faster the lights go the higher the slower the lights go and yes they work with ELS Cars

Actually, the numbers have nothing to do with the speed. They change the flash pattern of the coronas.

Yes they will work with ELS 7 and below cars (mostly, anyway), but you need to disable the old wig wags first (by pressing L or turning them off from the ini file)
