Not sure if you mean that you spawn a ped (Little Jacob for example) and make him a cop or? If you mean that its not possible, its only possible if you have the police uniform added to Little Jacob But if you mean to change from a normal ped (Little Jacob for example again) to a police officer its possible, just find the officer ped in the Model Spawning menu and hit Numpad 5

Simple Native Trainer -> Model Spawning -> Animation Menu -> Find the animation you want to use and hit Numpad 5 To the "everytime I pressed ALT+M to open the ELS menu it put me on a motorbike" go to Simple Native Trainer -> Options -> Second Page -> Enable/Disable Keys
