I completely somehow messed up my EUP and its affecting all of the AI Ped uniforms and my custom ones, so I just want to revert but how do I uninstall it bc I don't see any videos on it anywhere.

As far as that issue goes make sure that you install the configs(Both for default and Ultimate backup) for EUP.

but if you are keen on uninstalling EUP:
go to GTAV/mods/update/update.rpf/Common/data>Open the dlclist.xml in edit mode>and remove the line for EUP and SUP(If you installed Serve and rescue)
additionally you can also delete the folders for EUP and SUP from GTAV>mods>update>x64>dlcpacks.

What about the Mp clothes? I feel like I installed custom clothes to the mp clothes folders, and that's causing me issues. can I reinstall those folders?

Custom clothes are installed in the EUP folder so they should be uninstalled when you uninstall EUP 

 

But if you are asking if you can re add them then 

Depends on what eup version it was made for if it's an entire uniform pack

But if it's just a few add-ons should be fine

Alright, so I was able to reinstall EUP and MY uniforms + menu are fixed, but Backup AI Ped unit uniforms are messed up, but the npc cops who are already there when you load in to PD are fine. unsure what to fix, and I did not install a custom uniforms.

If you use ultimate backup you need to install a separate config for that
