Okay so - Apparently I'm the only one that thought of this.

I made a backup unit that is a coffee truck.

All that is left in order to make it WORK WORK is that it has to somehow:
1. Spawn as a Barista PED - This I am not sure how to do. 
2. Work off the back of the medic script and instead hand the player a coffee instead of a medkit.

#1 should not be difficult to do and still maintain some level of immersion. I could always change it so the script acts as Police and the Barista stands there.
#2 requires more work, sadly within my capability but without knowledge of the inner workings of the mod or game. 

If anyone wants to give me some help with #1, I'd be happy to upload it with some thanks and even with more liveries.
