I would like to know if there is a way to add the new Intimidation with cop holster or to add a key bind to activate the animation without needing to go into the interaction menu.

I believe with Cop Holster, you can press caps lock to put your hand on your gun.

While the action is running, just right click (or whatever your aim button is) to quick draw.  It doesn't matter if you had a weapon selected or not, only that you have one available in the pistol slot.
