For the menu stuff, ensure RageNativeUI is installed and up to date. For whatever reason, Bejoijo does not update it in his plugins and it causes conflicts with other plugins. As for the crashing, it would be easier to diagnose if you installed and tested things one at a time so you could determine exactly when the issue started happening.

Game crashes are most usually due to an issue within the mods folder. You can try renaming it to _mods and playing for a while to see if the crashing stops. If the crashing stops, then there's something broken within the mods folder.

Game crashes do not usually show anything in the Rage log.

Please describe the issue you are experiencing.

If you uninstalled Grammar Police, you can't talk to dispatch with your microphone.

RagePluginHook.log is not RageNativeUI.

The log shows that Grammar Police was installed at the time, so you did not delete it before the log. If it's actually gone now, try playing again. If it crashes again, upload a new log. Also, RageNativeUI goes in the root GTA V folder, not the plugins folder.

Did you delete it before or after that log?

Undo your changes or reinstall those files from Grammar Police.
