I'd like to write my own .meta files for some cars so I can use them as add-ons, but I have searched this site and Google and cannot find any guides/tutorials. Tried searching YouTube but the only results were how to add .meta entries, not create them. Can someone please point me in the right direction?

 

Notice: I tried taking a carvar and a vehicles.meta and just changing all the names but it just crashed my game.

Sounds like you want to start a custom DLC. Addon vehicles can be completely separate in their own DLC. However, replacement vehicles must have the original vehicle.meta edited in order to work as needed.
