Is there any reason to use multiple rows of polygons on a flat surface?

Normally, more polygons allow higher-fidelity reproduction of a curved surface. However, if a surface is flat and I could get just as high-fidelity a reproduction with 2 triangles, is there any reason to use more?

^^ What Lundy said. If the surface you are making has a curve, or is rounded , then more polygon's are needed to make that curve or roundness. If its flat, then the only advantage I've seen is with mapping that surface to a specific texture.
