Yeah, it could be the Christmas update, but then again I've seen a report before the Christmas update regarding the same weapon glitch and the person apparently fixed it differently. It wasn't the weapon meta files at all because I've just replaced them with the vanilla files and yet the issue kept on appearing. So, I don't know what's going on. I've also reinstalled my game multiple times and yet the issue is still here and it doesn't make any sense.

Yeah, I'm having the exact same issue here with my gun not showing up. It's also happening to other NPC's & as well as uniformed peds from stop the peds & suspect's with firearms. Had, an encounter today where I received a warrant for an arrest call & the suspect ran & he turned around looking like he was pulling out a rifle or something & it just wasn't coming out. So hopefully you find the solution. You ain't the only one, man. But, what's more interesting is that this has happened to other folk's as well, and I've seen a Reddit post from 3 years ago and had the same issue as the same we are having. Link:
