If you happen to use reshade, try taking it out for a session or two, and then take a note of it it crashed randomly or not. I know I have had that issue ever since I started lspdfr, and turned out, Reshade would crash my ELS.asi from time to time, and then other occasions just cause my game to crash to desktop. Everyones game will be a little different, so try and keep in mind the mods you installed, and ensure all metas you may have updated have no syntax errors or missing lines.

Do you have PoliceIgnorePlayer or something similar enabled by a trainer? I know you said you don't have any other mods, but trainers are so standard with GTA that people sometimes forget they are mods.
Also, your log says you have CalloutsV installed. Try removing that, I believe Luke added some sort of code similar to PoliceIgnorePlayer in one of the versions because I remember having that problem with it installed. I think it's been fixed in later versions though.
