I've watched a lot of police response videos from the UK, and have seen plenty of marked police bikes, but never unmarked.  That would be pretty damn cool.

Yeah they usually wear a black leather jacket over their police vest to cover the Hi-Vis tag on the vest.

This is a headcam footage of a traffic cop on an unmarked bike pulling someone over. 

 

They even have marked and unmarked lorries to catch drivers 'doing dangerous things' in their trucks that a normal unit wouldn't be able to see
