Okay my video card has a HDMI and DVI slots, the DVI is what i have my monitor plugged into now, if i buy another monitor, can i hook it up to the HDMI and will it work?

Yeah, it'll definitely work. Pretty much any graphics card with 2 slots lets you use them for a dual monitor setup.

I think you will need like 4-5 monitors, not sure though.

I don't know if that's possible with GTA. I know you can do that with flight simulators, but GTA may not support it. It's actually best while doing non-game stuff, because you can have 2 maximized windows at once. For example, you can have a browser open on one and a word processor on the other.
