Can anyone explain why this happens to any Firetruck or Ambulance I install in GtaV?

You're incorrectly installing skins on these vehicles.

Not sure how, I'm dragging the files into the YTD's and dropping and saving? is there anything else I do?

The new textures' names have to match the names of the old textures.

 I did, I replace amb_sign_1 with corrosponding name, same with Firetruck.
