It really depends on what you mean by putting in new cops. Are you asking about installing new cops that someone released or are you thinking along the lines of making new cops yourself?

Putting in cop models is basically just like installing a car mods. All you need to do is open componentpeds.img with SparkIV and import your downloaded files.

Be sure to make a backup of anything before you modify it just incase of installation errors.
