Editing vehicle textures in GTA V

So, i'm fairly new to modding GTA V so please bare with me as i've only started doing it for the past 2-3 days. 

My problem isn't with script mods, those work perfectly. my problem is with texture mods. i recently downloaded the Sheriff Granger texture (all white to replace the Black and White version), I install it and it shows up in OpenV, however when i close out of it and load up GTA V it gets to the launcher and starts downloading a 2gb update and replaces the modified files with fresh vanilla ones (presumably a security measure implemented by Rockstar to stop modding). My question is, is there a way to modify GTA V textures and get past the "update" without disconnecting my internet connection and playing offline?

Also, on the topic of V modding, has there been a texture mod released for the Vapid Interceptor to get rid of the POLICE on the doors and replace it with the tecture of the police buffalo and Stanier?

About the Interceptor, currently it's still not possible because the LSPD logo gets mirrored. We need to wait until fully vehicle modding is possible. Right now I put the showcase Interceptor texture. Not LSPD but better than original :)
