when should you and should you also update your drivers with software updates?

As a private, home user, you should update as soon as you get an update (atleast for Windows and your anti-virus). Drivers are also of course good if they are up to date, however you should check so your games aren't incompatible with those drivers. I would not recommend using any driver software for pretty much anything (unless it is for your GPU). Take note that I mean driver software, not the driver itself.
