      When I go off duty is there anyway to get my weapons back besides the trainer?

I don't believe so.  If they're removed when you end your shift then there likely isn't a way to get them back, besides the trainer.

What about your trunk.

If you go inside a police car you can get a shotgun, and then theres also some weapon pickups around the map (see the spoiler below) but the easiest ways would be to load your save game again or just use Trainer and spawn weapons with that.
