Unfortunately, GTAV is not exactly meant to have a complete map change like that as it messes with the rest of the game's configuration and whatnot. You will need to remove the things you replaced and verify your game files for missing files or uninstall and reinstall the game.

No matter what happens in life, be good to people. Being good to people is a wonderful legacy to leave behind.
