[Open IV] [Corrupt Game Data Error] After installing addon vehicles

I've deleted and retried installing all the mods I need for my Playthrough 4 times.

Past 3 corruptions were caused by the updated gameconfig which decided to work for some reason on the 4th try. 
I'm currently running the latest version (Updated 11.23.20) 

I've spent about past 6 hours putting in each modification and then playing the game to make sure it works properly. 

I've never had this issue before, even though i've been modding this game since 2017.

This is where I give up trying to solve this on my own and ask for help, Because this is starting to get rage inducing when I dedicated 6 hours to this on one of my only days off. 

Please tell me how to solve this issue and how to recover the "Corrupted" Mods folder so I don't have all of my work wasted, if it's possible.

EDIT No.2:
Update.rpf gets corrupted after replacing the gameconfig.xml Resulting in me not being able to open the file, also results in inability to play the games with OpenIV.ASI enabled. 

P.S. This game is more fragile than my fucking ego.
